Taco Tuesday

As you all might know from my latest posts' I am taking a raw cooking class. Last night we learned how to make some delicious 'raw' tacos and I wanted to share this recipe for all my vegetarian/vegan friends who love mexican food! When I used my leftover taco meat and salsa, I just added store bought sour cream and shredded cheese. you can make this recipe simple and just make meat and salsa if you're a veg head! For all my vegan friends I added a nacho cheese and sour cream recipe!

ENJOY! These tacos are AMAZING.

For shells we used big lettuce leaves!

Taco 'Meat':

Ingredients:

3 Cups walnuts, soaked (4-8 hours)

1-2 tablespoons chili powder

2 teaspoons cumin

3 tablespoons namu shoyu (a bottle is about 9$)

How to:

Place all ingredients in a food processor, pulse until walnuts resemble taco meat. Taste and adjust flavors

Salsa Fresca:

Ingredients:

4 medium tomatos

1 jalapeno pepper, seeded

2 green onions, thinly sliced

1 garlic clove

1/4 cup cilantro

1/4 teaspoon sea salt

1-2 tablespoons lime juice

How To:

For chunky salsa (my fav): chop all items and mix in bowl until incorporated well

for watery salsa: Roughly chop all ingredients and pulse in food processor to desired consistency.

Nacho cheese sauce: (Yields 1.5- 2 cups)

Ingredients:

1 cup brazil nuts

1/4 cup lemon juice

1 tablespoon miso

1 teaspoon sea salt

1 cup water

1 clove garlic

1 red bell pepper

1/2 tablespoons of nutritional yeast

How to:

Place all ingredients in blender, add water as needed to achieve desired consistency

Sour cream: (makes a LOT of sour cream, I suggest cutting recipe in half)

Ingredients:

1.5 cup of cashews

1 tablespoon apple cider vinegar

1 teaspoon miso

1 cup water

1/2 teaspoon sea salt

How to:

Put all ingredients into blender and blend until smooth. Should be creamy, thin, and white.
